Valtellina Casera DOP
During the summer Bitto is produced, In the other months of the year, according to tradition, the dairies in the valleys produced a "half-fat" cheese, obtained after removing the cream of the milk to make finest butter. Thus was born the Valtellina Casera cheese, protected by the Denomination of Origin, recognized by the EEC, a perfect blend of dairy product ,and the art of master cheese makers Valtellina.
The Valtellina Casera DOP cheese has a pleasant taste and has a delicate taste in the early months of maturation. The flavor and aroma become more intense after a long period of aging. Its crust gives off a pleasant aroma of milk, caserifcio, slightly green grass & mushrooms. When eaten it has a sweet and tasty flavor, The Valtellina Casera DOP plays a major role in giving our traditional Valtellina dishes such pizzocheri and Sciat, aromas and unique flavors.
